3 Quick & Easy Indian Snacks Recipe

1. Khaman Dhokla
Khaman Dhokla
is a popular dish originated from Gujarat. When you think about Gujarat and its
glorious cuisine, often the first images that come to mind belong to evergreen
dishes like dhokla, khaman, khakra and fafda. Gujarat offers a host of
delightful snacks that are very popular not only across the length and breadth
of India but worldwide.
Ingredients
2 cups gram flour (besan)
1 teaspoon salt
1 teaspoon turmeric powder
2 teaspoons sugar
2 teaspoons fruit salt/eno
For tempering
1 tablespoon oil
1 teaspoon mustard seeds
4-5 curry leaves
3-4 green chilli cut long length wise
½ cup water
Directions
Boil ½ cup water in a pan. Add
sugar and boil until all the sugar dissolves.
In a bowl add gram flour, salt,
turmeric powder and sweetened water and mix. Add ½ cup water and whisk to form
a thick consistency batter.
Next add fruit salt and whisk it
for about a minute. Grease a dhokla plate/round 8-inch baking pan with oil.
Pour the batter into the greased pan.
Fill a large pan with water and
place a trivet at the base. Set this container over the trivet. Cover it with a
lid and steam for about 15-20 minutes.
While cutting the khaman into pieces, use a sharp knife cut. Do not press the knife down rather cut it like a cake.
For tempering- Heat oil in a pan. Add mustard seeds and let it splutter. Add curry leaves and green chilli to it. Further add water and let it boil for about.

Rava Dosa
Dosa is a popular South Indian dish. Onion Rava
Dosa is a quick and instant dosa that can be prepared with handful of ingredients.
They are wafer thin and super crispy and resembles a savoury crepe/ pancake.
Ingredients
1 cup unroasted fine semolina (rava)
1 cup rice flour
½ cup plain flour (maida)
4 cups water
4-5 finely chopped green chillies
½ inch grated ginger
8 to 10 finely chopped curry leaves
1 cup finely chopped onions
2 tablespoons finely chopped coriander leaves
1 teaspoon cumin seeds
1 teaspoon salt
4 tablespoons oil
Directions
In a bowl mix plain flour, rice flour, semolina,
ginger and curry leaves.
Add water and salt and whisk to form a smooth
batter.
Use a pestle and mortar and crush the cumin seeds
roughly. Add the crushed cumin seeds to the batter and mix. Let the batter rest
for 15-20 minutes.
Whisk the batter once again after 15 minutes. Heat a
flat pan/tawa on high heat. Sprinkle some green chillies and onions on the hot
pan. Sprinkle the batter with your hands/ tumbler starting from the edges and
move towards the center in circular motion filling any large gaps. This must be
done fast and without using too much batter. It should just form a thin
covering over the onions and chilli.
Turn the heat to medium and let the dosa cook for about 2 minutes. Sprinkle some oil and let it cook until the bottom looks golden brown.
Gently lift the dosa from the edges and fold it in half.
3. Corn Bhel
Corn Bhel or
Corn Chaat Bhel is a quick and delicious snack made with boiled sweet corn,
tossed with chopped onions, peppers, tomatoes and spices, topped with crunchy
sev.
Ingredients
2 cups sweetcorn kernels
2 tablespoons finely chopped onions
1 tablespoon finely chopped green, red and yellow pepper
1 tablespoon finely chopped tomatoes
1 tablespoon finely chopped green chilies
1 tablespoon pomegranate seeds
1 tablespoon finely chopped raw mango
1 tablespoon finely chopped coriander leaves
Salt to taste
1 teaspoon chaat masala
Juice of 1 lemon
2 tablespoons nylon sev
Directions
Heat 2-3 cups of water in a pan and add the salt and
corn kernels. Boil it for about 5-6 minutes to soften the corn slightly. After
5-6 minutes, strain the corn using a colander and keep it aside to cool.
In a bowl, mix together the boiled corn kernels, onions, tomatoes, mixed pepper, raw mangoes, green chillies, pomegranate and coriander leaves.
Next add the salt, chaat masala and lemon juice and mix. Taste to adjust the seasoning according to your taste. Serve the corn bhel garnished with coriander leaves and nylon sev.
